Cooking
For work, we need zucchini, carrot, onion, tomato paste, wheat flour, salt, black pepper, sugar, garlic, sunflower oil, vinegar.
1 kg of onions clean, cut into cubes and sauté in parts of sunflower oil until soft.
1 kg carrots cleaned, grate it and sauté the lid on parts of sunflower oil until soft.
3 kg of zucchini peel and seeds, cut into cubes and fry portions in sunflower oil until almost transparent.
Place all the prepared vegetables into a blender.
Grind until a homogeneous mass.
Place the mass into a thick-bottomed saucepan and cook, stirring, about 30 minutes. Cooking must take place under the cover. Then add in the boiled mass of salt (1.5 tbsp), black pepper (2 g), sugar (1 tbsp), tomato paste (3 tbsp). Mix well. Cook, stirring, 20 minutes.
Meanwhile, on a dry pan fry the flour (5 tbsp) to cream color.
Add the flour and passed through the press, peeled garlic (8 cloves), vinegar (2 tbsp). Mix well. Cook for another 5 minutes.
Hot caviar packaged in a dry, sterilized jars and immediately roll. Put the jars upside down, wrap a blanket and leave until cool.
