I had a fillet of goose, but chicken. Each layer should be lubricated with the following sauce: finely chop 2 pickled cucumbers, add mayonnaise and chopped dill and pepper and mix well.
Salad put layers in the form of a bull's head: 1 - fillet of goose, cooked and sliced
2 - polka dots
3 - grated on a coarse grater boiled potatoes (salt layer)
4 - grated yolks
5 - grated proteins
