My problem with all the cupcakes is their crispness, some dryness, that is. So I've been looking for a recipe that will make a cupcake very soft and very moist. But I have this milk powder that needs to be diluted with water. The coconut milk gives the crust tenderness and softness, and adds moisture to the cupcake. The taste of coconut it is almost not felt.
Place flour, baking powder, liquid or dry vanilla, and stir with a mixer until smooth. The consistency should be something like very thick cream. If the result will be pieces of banana - not terrible.
Spread the batter in the cake pan. If the form of silicone - no grease, if any other - do French shirt (grease with butter and sprinkle with flour). The dough should fill the form max 3/4 full because it will rise well. This amount of dough I got two cupcakes, one form does not fit, so I baked in two rounds
Put in oven at 180 degrees for about an hour. Orientirueshsya on a dry stick, though it and may stick a banana slice (but test on a stick should not be). Then allow to cool slightly and remove carefully from the mold. Here's the first batch I did. With milk it is!
