Gluten-free muffins with quinoa
Today I surprised my family fancy pancakes. When I asked their opinion of what they are made, no one was able to guess! Very tasty, sweet, tender, soft, and useful gluten-free pancakes like all members of my family! Help yourself and you!

Ingredients

  • Flour

    1 стак.

  • Baking powder

    2 ч. л.

  • Salt

    1/2 ч. л.

  • Yogurt

    3/4 стак.

  • Honey

    3 ст. л.

  • Lemon juice

    3 ст. л.

  • Lemon peel

    1 ст. л.

  • Vanilla essence

    1 ч. л.

  • Quinoa

    1 стак.

  • Blueberries

    1,5 стак.

  • Chicken egg

    2 шт

  • Egg white

    1 шт

Cooking

Prepare quinoa. To 1 Cup of water take 1/2 Cup of quinoa. Bring to a boil, reduce fire and cook until tender. Quinoa is cooked pretty quickly. Turn off the heat and allow to cool. I used quinoa TM "Mistral".

Mix the hazelnut flour, baking powder and salt.

Separately, mix the yogurt, vanilla essence, honey, lemon juice, lemon zest and jelchi.

Combine both mixtures and add the prepared quinoa.

And parts mix up in the dough.

In the last turn add the blueberries.

Cook pancakes on a well heated pan in olive oil until Golden brown.

When serving, pour honey or maple syrup and garnish with berries.
