Caramel tart
Tarte (FR. tarte) — typical French cuisine flan from a special dough. Already one of the definitions salivating, isn't it? I present to you a delicate caramel tart.

Ingredients

  • Flour

Mix the flour and salt. Add cold butter cubes. Whisk until loose crumbs in a food processor or RUB the butter with your hands.

In a separate bowl, whisk the egg with sugar. Pour to the flour mixture. If necessary, add cold water (1-2 teaspoons). Knead the dough, make it a disk, wrap with cling film and leave in refrigerator for half an hour. Try not to Mix the dough, otherwise the basis will get very hard.

Roll the chilled dough into a circle. Put in shape with a side, make a couple of incisions with a fork. Refrigerate for 30 minutes. Preheat oven to 190 degrees. Close the base with baking paper, on which lay the cargo (peas or beans). Send in the oven for 15 minutes. Remove the paper with the load and return for another 10-15 minutes in the oven until Golden brown. Cool completely.

For filling, combine sugar, salt and butter in a large saucepan. Put on medium heat, stirring occasionally. Do not overdo, otherwise the mixture can easily burn.

Remove the mixture from the fire. Pour in the cream, mix well. Return to low heat and cook, stirring occasionally, until smooth. Remove from heat, cool completely. Pour warm caramel on the cooled framework and refrigerate at least 3 hours, preferably overnight.
