Carrot cake with currant jam and cream
This dough recipe for cakes with raw carrots, yesterday dictated to me by phone my friend from the city of Samara. The interlayer can be any. I chose what is easier, to speed up the process. The dough is very elastic and quietly distributed it on the form. Baked in silicone round shape. A friend asked me to bake the cakes in the pan. I did not dare. Very beautiful color of the cakes. The dough looks like sand, pleasant to the taste. Well, I did a layer of the ready-made black currant jam and thickly whipped double cream. The flour, measure, sift together with baking powder. Carrots grate on medium grater. Melt butter.

In a food processor add the flour with the baking powder, add a tiny bit of salt, not high rpm stir, pour in the sugar, increase the speed, add the grated carrots and then pour the butter.

The last little ball of dough, roll out thin, and bake it so that it could be crushed into crumbs (like Napoleon), Sprinkle the top with crumbs, including (if possible) and sides. Close the plastic lid and put a few hours in the refrigerator for impregnation. I stood for 3 hours. Cut into 8 pieces, but my husband likes big portions, I cut into 4 pieces.
