Fruits and berries you can add to your taste depending on the season.
In a saucepan boil water with sugar, then add orange juice and simmer for another 5 minutes. The rind of the orange do not throw away, it is still useful.
Rhubarb cut into large chunks, strawberries cut in half.
Add the boiling water, rhubarb, boil for 5 minutes, until the rhubarb is tender. Turn off the heat, add the strawberries, ginger, the peel of half an orange, apricots and lemon balm. Cover and let stand at least 2 hours.
To serve chilled, garnished with a sprig of lemon balm.
